Image processing through colors

Hey,

I'd like to use this image to classfy a phaze of steel, user will enter (x,y) which are time (10^-1-10^5 sec) and tempreture (0-800 celcuis), and and the program will know by the color what phaze it is.

I'm fairly new to matlab and will appreciate any help so thank you evryone !
