Satellite image classification for specific crop type

Hi everyone. I need to classify a land cover map detecting for example olive trees. I want to use Sentinel2 images which are free. Is there any existing procedure to follow to classify a satellite image in Matlab? I tried QGIS supervised classification method but in an area full of vegetation, detecting one type of tree is difficult. I would appreciate any help. Thanks
