The decription about the az are as follows:

Azimuth, specified as an angle in degrees from the negative y-axis. Increasing this angle corresponds to counterclockwise rotation about the z-axis when viewing the x-y plane from above.

I think the word "counterclockwise" is wrong. It should be "clockwise". The code can prove that.

I guess this line in documentation is about the rotation of observer around the +z-axis. If you look at the explanation about the line of sight here: https://www.mathworks.com/help/matlab/ref/view.html#mw_a674278c-855a-4302-98e4-fc13c181cfd8, you can see that when the observer's line of sight rotates counterclockwise, the axis appear to have rotated clockwise.
