How to Create a Bicycle Dynamometer

I am trying to create a bicycle dynamometer model in simulink.

I want to be able to model a pedal powered dc generator that can produce up to 6V & 3W output, similar to a Shimano Hub dynamo.

What blocks etc should I be using to simulate this?

I will then be modelling various loads such as bike lights being powered by the dynamo.
