How can I perform image segmentation on a multidimensional 256x256x124 uint8 MRI scan of the brain?

I have MRI scans of the brain in which I am trying to compare the amounts of grey matter, but as they are all multidimensional I am struggling with finding how to isolate the grey matter from each scan. Any help will be greatly appreciated!

Hi,

You seem to be having an image stack of 124 images each of size 256x256.

The following MATLAB example describes exploring slices from a 3 D MRI data set.
