I would like to turn off the broken "dark mode" theme on the MATLAB website, but there doesn't seem to be any way to do this.

In MATLAB Online, first, go the the 'HOME' tab, then in the top toolstrip in 'ENVIRONMENT', click on the 'Settings' icon. This will launch a pop-up window. Then click on 'Appearance' and choose the 'Desktop Theme' you want.
That should work.

I did try this: the MATLAB Online window does change to light theme, but it only applies to that window/tab. When I open Help or any other page it reverts to the broken dark theme.

That may be a browser setting, then.
In Firefox, go to 'Settings' -> 'General' and scroll down to 'Language and Appearance' -> 'Website Appearance'.
One option is to reboot your computer. That may solve it.
Otherwise, you will most likely need to Contact Support for this problem.
Include the URL of this thread in your note to MathWorks so you don't have to repeat everything you wrote here.
Please post back here with the solution MathWorks provides.
