Dear All, I've just updated to MatLab 2025b from 2022. Previously, when you doubled clicked on a variable in the Workspace, it opened a new global tab that had its own tabs for each open variable. Or it opened as a window and you could dock that Window. Separately, you had the editor window (tab) for scripts and functions. It was easy to switch between variables tab and the editor tab. Now variables open in a split screen view or as tabs mixed in with open scripts. Is there a way to switch back so the variables window gets its own global tab when docked separate from the editor? It is not helpful to have variables open in tabs adjacent to scripts.

It is irrevocable that Mathworks is committed to the new desktop going forward. I would recommend <What's behind the new desktop> to get a viewpoint from the developer's perspective.
That said, submit complaints and/or enhancement requests officially at <Product Support Page> in order for there to be any chance at all of them making changes in appearance and/or functionality. Answers isn't an official channel so complaints/suggestions posted here may or may not be seen and it's unlikely would ever get into the enhancement list otherwise.

Sorry, but I don't care about the developers perspective and others in other threads telling me "to get used to the new workflow". The product is for the user and not a "holy grail" we users are blessed to be allowed to use.
The new workflow/design seems to affect quite some users if you read the numerours threads. It would be nice to have at least the option to switch to the old format.

A common wish that ain't agonna happen. The best one can hope for will be to continue to make suggestions/requests about functionality and presentation. The only recourse for the prior desktop layout will be to not upgrade.
"The product" is a proprietary commercial system so the owner has the perogative to do as wish and the corporate decision has been made to go this route. I'm one (perhaps the primary?) of those who have pointed to the link that does provide some of the rationale behind the move only to provide some context.
One can expect revisions in response to user feedback that over time will provide more traditional interface features or at least streamlined replacement functionality but clearly the basic form is set. How much this will impact business going forward will be interesting to observe; whether it will be enough to really cause a perceptible shift in market share or not.
