Stereographic Projection Plotting (with contourf)

Can someone describe how I can contourf an array of data (10x75) in a stereographic projection over the north pole including coastlines.

(the 10x75 array is 5deg x 5deg data from 20-70N, 180W-180E)

Please provide any function info / software links and give basic steps
