Windows 7: support up to R2021b
Windows 8: discontinued
Windows 10: will be supported at least through R2023b
Windows 11: started with R2021b, will be supported at lest through R2023b (probably later)
For MacOS and Linux, see the chart.
The primary announcements are in the MATLAB release notes.

I am also interested in the answer to the question posed, but this doesn't really clear anything up.
Looking that the Roadmap today, only releases R2020b and later are listed. Does this mean that releases prior to that are end of life?
Are end of life dates available anywhere?
I need to comply with a requirement which says we can only use software "that a vendor has committed to support by providing regular updates or patches. The vendor must provide the future date when they will stop providing updates."
Any further light you can shed on your lifecycle policy would be appreciated.
