How can I print multiple texts that change using a for statement?

Create the text(s) you need once, before the loop, and then update them inside the loop.
% t: 1-by-6 array of text objects
% (Positions don't change, set them now, and
% initialize with empty String)
t = [ ...
text(3,1.5,3,'') ...
text(3,1.5,1.5,'') ...
text(3,1.5,0,'') ...
text(-1,3,3,'') ...
text(-1,3,1.5,'') ...
text(-1,3,0,'') ...
];
for i = 1:100
% ...
% your code to calculate x2, y2, z2, joint1angle, etc.
% ...
% update the Strings of t (adjust the format as necessary, e.g.,
% put them back as cell arrays if you want multi-line text):
set(t(1),'String',sprintf('X : %.2f',x2));
set(t(2),'String',sprintf('Y : %.2f',y2));
