I would like to get rid of the EDU>> part in my student version command window. How do I accomplish this?

Buy a non-student version.

I got matlab with my school with all my classmates and I'm the only one who has the problem, clearly not dropping more $$$ on a completely new model for something that can and/or should be fixed internally

That's part of the license agreement. It's built-in to your student/educational version, not an option that they let you turn on or off. I think you can upgrade to the "Home edition" for only around $50 more than the student edition if it bothers you that much.

Not exactly. HomeEdition costs more than $50 more than student version.
Although, I still think it is great to have home edition too.

With no toolboxes, Home Edition is $149, according to their web site with toolboxes priced at $45 each. I thought Student Edition was $99 (depends on country) though I think it includes a bunch of toolboxes.
