How do I normalize Area Under Curve of NIR spectra to 1 using Matlab 2020b please?

Don't you just do

signal = signal / sum(signal);

That's if you're plotting your signal like little bars in a bar chart. If you're computing area like they're little trapezoids, then use

signal = signal / trapz(signal);
