Simulink Load Cell myDAQ

Hello! I have two load cells connected to a myDAQ. The Simulink plot on the bottom left shows me pressing on load cell 1 and then pushing on load cell 2, then I export my data to the workspace as 'out'. When I run plot(out) I am shown a figure that looks like the Simulink scope. However, when I run plot(out.data(1,:) I get the MATLAB figure on the top right. I do not want the signal to be combined and want to plot each seperately! Any advice?
