Help with modifiying bins in a scatterplot for ecg data.

So i am trying to make a scatterplot (or lorenzplot) with bins like these here. So i would like to count how many points are in each bin (0-12), from the scattered ecg r-r interval data.

Does anyone know how to customise the bins in a scatterplot ? is this possible to recreate ?

I think this is the matlab code to define the bins , in the binscatter plot function. but i am having trouble defining them .
