The note at the end of the documentation page for the audioDatastore function states "Introduced in R2018b". If you are using an earlier release you will need to update to release R2018b or later and have Audio System Toolbox installed to use it.

The Audio System Toolbox is not part of the Student Suite, but can be purchased as an optional extra.
