The best place to start is Simscape Battery, a new product introduced in R2022b. There you can design and simulate the battery pack and battery management. There are many examples to start with.

If you want to use only plain Simulink blocks to build a simple battery, that is possible starting with the equivalent circuit. You can take a look at the equivalent RC circuit equations accesing the following resource:
