At this Link you can find a small tutorial how Video Mosaicking (which also can be done for documents) in Simulink is done. This may can help you.

If you specifically want a matlab code, you may find a code in the ' file exchange' of Mathworks.

Finally I found a small tutorial on this website how mosaicking could be implemented.
