Hermite interpolation and pchipd method

1) Anyone know how to show derivates direction on plot using pchipd?

2) My prof. said me to create a method that could implementate Hermite global interpolation but I don't understand what he means. I used pchipd method to local interpolation but what i should do for global and is it possible to extend this method to curves?
