Importing Image boundary coordinates to Matrix for reconstructing into a geometry

I am having an EBSD image in Jpeg format. Need to read the coordinates wherein there is a change in colour i.e. the boundary coordinates wherever the colour changes and also to not the information of the colour of the particular area. Above coordinates and colour info need to be stored in an array , so as to reconstruct the geometry (2D) for analysis. Please guide me with the same.
