how to interface multiple sensors on Arduino with webcam camera on Matlab, getting the pictures and sensors reading all at the same time?

I am working on a project where I am getting multiple pictrues (for edge detection an creating 2d map) and IMU and IR distnace sesnor reading to be able to determine the location of the module at any given time, However I want to be able to get the data recording on synce, I tried using Kinect xbox360 as the camera t first but the hardware support package doee not support this version, any suggestion for the camera is appreciated to be able to time stamp and synchroise the data reading from Arduino and images taken?
