Movie analysis color change

At MATLAB R2016a for Win64, to analyze the movie which has some color change with respect to time. How can I get the color value (CIE color information) versus time plot?

Just look at the mean value
meanValue = mean(rgbImage(:));
If you see an abrupt change in that value from one frame to the next, it could indicate a scene change.
